Are you kinda over the whole pumpkin spice craze? Neither are we! So naturally, our period cravings have taken a turn for the seasonally appropriate and we're ready to bundle up with all of the cozy autumn things, like a fuzzy blanket, a cup of tea, season 2 of Stranger Things, and some fresh baked Pumpkin Spice Granola.

Ingredients:

3 cups organic rolled oats
1 cup raw pecans (leave them whole or roughly chopped)
1/3 cup raw pepitas
1/3 cup coconut flakes (optional)
1/3 cup sliced almonds (optional)
3 tbsp organic sugar
1 tsp pumpkin pie spice (or a combination of cinnamon, nutmeg, and allspice)
1/4 cup coconut oil
1/3 cup maple syrup
1/3 cup fresh or canned pumpkin puree
salt to taste

Directions:

Preheat over to 350 degrees. Mix together the oats, nuts, spices, coconut, and sugar in a bowl. Set aside. In a small saucepan over medium heat, stir together the coconut oil, syrup, and pumpkin puree until it's smooth and liquid. Pour this over the dry ingredients and mix together quickly. Then spread the granola mix onto a baking sheet in an even layer and pop in the oven. Bake for about 20 minutes or until golden brown, stirring halfway through. Remove from oven and let cool, or scoop some straight into a bowl, top with vanilla yogurt or applesauce, and consider your pumpkin pie cravings satisfied.
